250 (грамм) черной квасоли, заранее замоченной в прохладной водной массе на 12 часов; 2(два) стол. ложечки оливкового масла; 1(один) очень мелко нарезанная головка лука; 1(один) толченый кусочек чесночка; 1(один) сухой перчик чилли, чищенный и порезанный; 2(два) порезанные морковки; 1(один) измельченная палочка сельдерея; по 1(один) чайной ложке жареных семя кориандра, тмина и гвоздичного перчика; 1(один) лавровый листик; 100 (грамм) несоленого постного масла; цедра и сок 0,5 лимона; 1(один) стол. ложечка очень мелко порезанной кинзы; соль; перчик. В здоровый кастрюле пассеруйте на оливковом масле лук, чеснок, чилли, моркови и сельдерей вплоть до золотого окраса. Добавьте промытую квасолю и овощной бульон. Доведите вплоть до кипения на малом огне и прокипятите 10 мин.. Специи и лавровый листик завяжите в марлевый мешочек и опустите в кастрюлю. Накройте крышкой и тушите на малом огне 60-75 мин. вплоть до готовности. Вытащите из кастрюли мешочек вместе с специями.Приготовьте цитрусовое масло. Разотрите сливочное масло, сок и цедру лимона, кинзу, соль и перчик. Скатайте колбаску 2(два),5(пять) см толщиной, заверните в пленку и выложите в охлaждaющую cиcтему. Остывшую массу порежьте на 12-16 кусочков. Протрите суп. Подавайте горячим, положив в каждую тарелку 1-2 куска цитрусового масла.На 6(шесть)-8(восемь) порций.
