Бабка из судака либо щуки

Рыба - I кг, сливочное масло - 100 грамм, белоснежная булка - 100 грамм, молоко -1 стакан, репчатый лук - 1 шт., моркови - 1 шт., корень петрушки - 1 шт., мука - 1 стол. ложк., сухарики - 1 стол. ложк., яичка - 3 шт., постное масло для жарки, лавровый листик, зелень, соль, черный помеленный перчик - по своему вкусу.

Судака либо щуку вычистить, промыть, убрать кости, убрать кожицу и мясо порезать на части. В молоке размочить булку. Репчатый лук очень мелко нарезать и легонько прожарить на сливоч. масле. Мясо судака (щуки), булку и лук дважды пропустить через мясорубку с густой решеткой, сложить в кастрюлю, присолить, заправлять солью, перчиком, очень хорошо помешать и добавить, все период размешивая, сырые яичка и разогретое сливочное масло.

Приготовленную массу положить в намазанную маслом посуду либо сотейник, положить в другую (большую) посуду с горячей водой и проварить на пару приблизительно 1 час.

Готовую бабку порезать на порционные кусочки и, подавая на стол, залить подливой и обсыпать зеленью петрушки.

Для приготовления подливы рыбью голову и кости сварить, добавив коренья петрушки и моркови, лавровый листик и темный помеленный перчик. Готовый бульон сцедить. Муку легонько поджарить, развести рыбным бульоном, проварить и заправлять маслом.
